4 cups cut-up seedless watermelon (about 1 pound)
1/2 cucumber, halved lengthwise and sliced
1/4 cup fresh mint
1 tablespoon fresh lime juice
1 teaspoon canola oil
1 teaspoon local honey
sea salt and black pepper
Toss the watermelon, cucumber, mint, lime juice, oil, honey,
½ teaspoon salt, and ¼ teaspoon pepper in a medium bowl.
Serve room temp. Enjoy!
